There are wide variations in the amounts of chemical salts naturally dissolved in our drinking water and tea made with the same blend will usually taste quite different in “soft” or “hard” water areas. People get used to the effect of their local water on the tea they drink, and choose a blend to suit their preferred taste. Naturally soft water tends to produce tea with a brighter, golden colour, but if your house or place of work has an artificial water softener installed, you should always use the direct mains tap to fill your kettle, as the softening process ruins both the appearance and the taste of tea.

Sri Lanka is a beautiful tropical island in the Indian Ocean and is one of the world’s largest producers and exporters of tea

Tea was first introduced in Kenya in 1903 by GWL Caine and was planted in present day Limuru. Commercialization of tea started in 1924 and since then the nation became a major producer of black tea. Currently Kenya is ranked third behind China and India in tea production. Kenyan tea is also one of the top foreign exchange earners, alongside tourism, horticulture and Kenyan coffee.

The practice of drinking tea has a long history in China, having originated there. Tea is deeply woven into the history and culture of China. The beverage is considered one of the seven necessities of Chinese life, along with firewood, rice, oil, salt, soy sauce and vinegar. Chinese tea can be classified into five distinctive categories: white, green, oolong, black and post-fermented. Other categories are scented and compressed teas. All of these come from the Camellia Sinensis plant.

Commercial production of tea in India began after the conquest of large areas by the British East India Company, at which point large tracts of land were converted for mass tea production. The widespread popularity of tea as a recreational drink began in the 1950s, after a successful advertising campaign by the India Tea Board.
